Maple Pecan Waffles

These waffles are perfect for any occasion, from lazy weekend brunches to celebrating special moments with loved ones. Plus, with a warm and inviting ambiance at Brekkie, you'll feel right at home while savouring this delightful treat.

This month Chef Martina is sharing her Brown Butter Maple Custard recipe, we serve it with our maple pecan waffles, but you can add lashings of this custard to almost everything in the fridge!

Brown Butter Maple Custard

1 block butter

4 litres of whipping cream

2 cups maple syrup

2 tbsp vanilla extract

20 egg yolks

2 tbsp cornstarch 2 tbsp water

Steps:

1.      Brown butter

2.      Once the butter is browned, add cream, maple syrup and vanilla.

3.      Bring mixture to a boil.

4.      Once the mixture has boiled, temper it into egg yolks and return to heat.

5.      Make a cornstarch slurry combining water and cornstarch

6.      Add slurry to custard

7.      Heat until thick and the mixture coats the back of the spoon

8.      Cool and store
